Tacos de Jicama
Another healthy treat from the Latin region is from Italian-born executive chef at Tortilla Republic, Cathy Shyne. "These Tacos de Jicama are served inside sliced jicama, a crunchy root vegetable, high in vitamin C and fiber and low in calorie," she said.
