6 Latin Recipes by Chef Bobby Flay

Bobby Flay is no stranger to Latin American cooking as the chef and restaurateur knows quite a lot about Latin-inspired dishes. Here are just some of his famous recipes to whip in your own kitchen: 

1) Guacamole

Guacamole is a favorite party dip developed by the Aztecs, the original inhabitants of Mexico.

Ingredients:

1/4 cup fresh cilantro, chopped
3 tablespoons red onion, diced
3 ripe avocado, peeled, pitted and diced
lime juice, use at least 2
1 or 2 jalapenos, diced

Directions: Mash all of the ingredients together and then season with salt and pepper.

2) Baked Clams

Spanish-style cooking makes use of a lot of clams in their dishes and this is one of the easiest to prepare and enjoy.

Ingredients:

3 pounds Littleneck clams
1 cup cornmeal
2 tablespoons salt
3 cups bread crumbs
1/2 cup Parmesan
2 lemons, juiced
1 tablespoon chopped garlic
2 tablespoons pesto
1/2 cup chopped parsley leaves
1/2 cup olive oil
1/4 pound clarified butter

Directions: Preheat the oven at 350 degrees F and then place the clams in a bucket with the cornmeal and salt. Set aside. Put the rest of the ingredients in a bowl and add the clarified butter last. It should be moist but not wet or runny. To prepare clarified butter, follow this recipe. Then lay out the clams in a baking sheet and put the mixture inside. Bake for 12 minutes or until it is brown.

4) Ropa Vieja meets Picadillo or Ropa-dillo Arepas

This meal is an elaborate dish that has to be prepared in different phases as you will need to do the arepas and the picadillo separately. The recipe was solicited from Flay's partner, Elyse Tirrell, whose father often prepares Ropa Vieja, the Cuban comfort food. The recipe was twisted for extra-flavor and texture, thus it also has elements of another famous Latin American dish, the Picadillo. 5) Grilled Mahi Mahi with Cilantro Gremolata
