Craving for comfort foods is a universal human experience. We eat these foods on an emotional urge rather than on a need to respond to events that may have left us feeling a bit blue and bruised.

However, comfort foods tend to be a little unforgiving to our diet and weight loss plans. It's okay to indulge a bit but if dietary restrictions call for vegan or vegetarian foods, here are 7 Latin comfort foods you can make at home:

1.) Mexican molletes with mango-basil salsa

Molletes are a staple for any Latino household and can be consumed at any meal. You can have it for breakfast, lunch, dinner in any way you like it. This vegan recipe from Holy Cow Vegan also has a recipe for perfect crusty bolillos that goes with this if you're ever up to the task of making the whole thing from scratch.

2.) Sopa de lima (vegetarian lime soup)

Nothing soothes the soul more like a refreshing bowl of lime soup, but even better, when it is made vegetarian. This is sort of the Latin-American version of chicken soup but more hearty and relaxing. This recipe from Serious Eats is easy to make and can be prepared in less than an hour.

3.) Spicy cream of chayote squash soup

Nothing beats creamy soup like chayote soup we fondly know from childhood. However, if you want something a little spicy, this recipe from Sisters Who Dish is perfect for you. It's also vegan and vegetarian so have a bowl or two.

4.) Roasted butternut squash and black bean enchiladas

This recipe from the Reluctant Entertainer is tagged as a dinner party food or casual meal for guests, but this works perfectly if you have company over and trying to sort out things in your lives together. It's easy, quick to make, vegetarian and filling. It combines all the best qualities of a simple comfort food.

5.) Beer-battered tofu tacos with chipotle aioli

For some, drinking beer is a great destressor but it is better when it's cooked in food. This recipe from 40 Aprons is a testament. Instead of going to the Mexican drive-thru, make your own tacos instead and make it with beer. This vegan recipe combines two usual comfort food go-to's in one and it's surprisingly healthy.

6.) Vegan tortilla de patatas (Spanish potato omelette)

Nothing can go wrong with a dish made from potatoes as it is a universally accepted vegetable that anyone from the consumer spectrum likes. While omelettes are basically made from eggs, this vegan version from Keepin' it Kind uses chickpea flour and firm tofu as substitute.

7.) Asopao de gandules (Rice and pigeon pea soup)

Abuela always busts out the asaopa during the rainy seasons and while it is normally made with chicken, beef, pork or seafood, a vegetable version exists. This recipe from What's 4 Eats is a vegetarian version that makes use of pigeon peas or gandules.
